Description
A 5th generation winemaker at this 34-hectare estate located in Chablis. Most of the vines are situated in the best premier cru and grand cru appellations and the wines are some of the most sought-after in the region.
This concentrated and honeyed white comes from the Vaudesir climat (plot) which is itself divided into 2 plots by the Chemin des Vaudesirs. Some vines face south, others face south-west and the Grand Crus from these plots are considered among the most feminine of all the climats. The Chardonnay grapes are from 25-year-old vines and are hand-harvested. Fermentation takes place in stainless steel tanks and 30% of the wine is aged in oak barrels for 14 months.
Golden straw-yellow in colour. Concentrated aromas of mango and pineapple with a touch of oriental spice. On the palate, mineral and rich with flavours of melon, honey and apple with a touch of pepper. The finish is lengthy with chalky notes. Absolutely superb! Drink with Poulet de Bresse with cream of morel sauce, Thai-style prawns with lemongrass and ginger or a dozen Fines de Claire oysters.
